4 pieces of salmon, skin on
Rub is in salt & pepper (1 tsp each)
Put it on parchment - into the oven on 120 degrees (25-30 minutes)
HERB RELISH:
2 tablespoons capers
1 small shallot (finely chopped)
Juice and rind of 1 lemon
2 tablespoons of Cobram Estate Extra Virgin Olive Oil
Salt and Pepper
A cup of parsley
3/4 cup of any soft herb (dill, mint, chives etc)
Mix in a bowl
Put the Herb relish on top of the salmon
Serve with vegetables of choice (asparagus a suggestion)
