We had a fantastic conversation with Nic Zaccardi, and while the video had some issues, it certainly didn't take anything away from the chat. Nic is a wealth of information and while working at the Kandanga Farm Store, has helped countless people in their personal pursuits. Our conversation covered everything from the importance of cover cropping to animal rotation, and the nutrient density of foods. It is a great chat. I'm sure you'll enjoy it.
Nic grew up in Victoria, and moved to Queensland 10 years ago. He studied nutrition and dietetics at the University of the Sunshine Coast, and started with Queensland health as a dietitian after graduating. He worked in a couple of different roles including being part of the transition care team, which was a community based role, and as a clinical dietitian in hospital. Nic decided to move back to the farm, with the desire to farm full time. He currently grows a lot of small crops, and runs a flock of around 400 pasture-raised chickens to produce eggs, while also working at Kandanga Farm Store. The methods he uses to farm focus on regenerating the soil, rather than depleting it. This includes crop and animal rotations, cover cropping, inter-row cover cropping with small crops, and no use of synthetic fertilisers, chemicals or sprays. The plan for him is to expand the flock of chickens next year to around 2500, and begin running some cattle too.
